Back when "Flying Was Fun" Alexandra Smythe and Cate Clarke were Flight Attendants with a Major International Carrier. Prior to Private Jets coming into vogue, Alexandra and Cate traveled in the First Class World, meeting and greeting the top celebrities, politicians who would become Presidents, nouveau riche, and yes the occasional Headline Grabbing Criminal in Handcuffs!

Patti's Sweet and Easy Chicken Salad

This recipe was a Home Run at a recent gathering! Enjoy!

 

Patti's SWEET AND EASY CHICKEN SALAD

2 (4) BONELESS, SKINLESS CHICKEN BREASTS

ROAST AT 350 DEGREES FOR 1 HR. 10 MIN. COVERED.

SEASON WITH BASIL, DASH RED PEPPER FLAKES, SALT & PEPPER.

REMOVE FROM OVEN, COOL, THEN DICE.

¾ C. (1-1/2) VANILLA YOGURT

1/4C. (1/2) MAYO

1 C. (2) CRAISENS

1 SM (2) PACKAGE CHOPPED PECANS

1 (2) FIGI APPLE, PEELED AND DICED

DASH LEMON JUICE.

IN MEDIUM BOWL MIX ALL INGREDIENTS. CHILL AT LEAST 30 MINUTES BEFORE COMBINING WITH CHICKEN MEAT. CHILL AGAIN. SERVE IN PITA POCKETS.
