Back when "Flying Was Fun" Alexandra Smythe and Cate Clarke were Flight Attendants with a Major International Carrier. Prior to Private Jets coming into vogue, Alexandra and Cate traveled in the First Class World, meeting and greeting the top celebrities, politicians who would become Presidents, nouveau riche, and yes the occasional Headline Grabbing Criminal in Handcuffs!

Delicious Coconut shrimp recipe! Come and get it shrimp lovers!

Coconut Shrimp:

Jumbo shrimp

4c - flour

8t - curry powder

8t - jerk seasoning (optional)

2t - baking powder

4 - eggs

3 ½ c - coconut milk

Olive oil

4c shredded sweetened coconut

Procedure:

Clean shrimp, leave tail on

Butterfly shrimp. Do not cut all the way threw.

Mix half cup flour, curry, jerk (optional), salt and baking powder in a bowl.

Stir in egg and coconut milk, to make a smooth batter

Place remaining flour on a plate.

Place coconut on another plate

Dip shrimp in flour, then batter, then coconut coating each time well.

Fry at 360, for 3 min.

Season and serve immediately.
